We bought ribs, sausage and brisket yesterday. My wife prepared part of the ribs and some brisket last night. I have been eating ribs for a long time. I was raised in Lee's Landing, 7 miles from Ponchatoula (makes it way out in the country) and have had a lot of experience of eating good stuff. I travel the world in the music business, eating at the finest restaurants in the world.
Those damned ribs were over the top, Luckily I stopped myself at 3 and the bones of my wife's two. The slice of brisket was also terrific.
So, I think that you have the great method, don't change anything. We will be back in a few months, and I look forward to having more.
